What happens to the gelato overnight
Our Live Cabinet shows you exactly what's in the display right now. But a display cabinet isn't left running as a shop window all night โ so here's the part you don't usually see, and the care that goes into it.

The cabinet rests for the night
When the doors close, the display doesn't just switch off with the gelato left sitting in it. Everything comes out. What you browse here in the evening is our most recent cabinet โ resting until we set up again.

Every night
Gelato put away properly
Each tub is covered and returned to the freezer, where gelato keeps far better than in an open display. It's a small thing customers never see, and it's a big part of why the next day's scoop tastes the way it should.

Clean and ready
The display is cleaned down
With the trays away, the cabinet is emptied, cleaned and made ready. It's the unglamorous part of running a gelato shop โ and the part that keeps everything else honest.

Every morning
Set up again for service
Before we open, the cabinet is set back up and the trays are returned to their places, ready for the day. It's a fresh start every single time we open the doors.

Small batches, real ingredients
Our gelato is made here in Labrador in small batches, with milk from Maleny Dairies and premium Italian ingredients. Small batches mean we can keep the range interesting and rotate flavours โ and keep our eye on every one of them.

A full cabinet, ready for you
By opening, the cabinet is full and glowing again โ and by evening it becomes the vibrant, glowing wonderland by the Broadwater. Come and see what's in today.
